I’ve typically be building my projects around clients rather than workflows - so each project folder contains the contextual documents for that client. Every client has unique workflows so it’s not as easy to organize around a task that would become repeatable. Is this still an effective setup?
This is 100% an effective setup, I think, for your kind of work and some work I do for clients. I have client project folders too, and if you work in an agency world, I know for a fact they also use projects for client work. I think there's just so many use cases for project folders; the label "projects" can just maybe be a bit misleading.
